Undertale has enough likeable characters and backstory to make an intriguing movie, but removing the player out of the equation would be a tough call. Of course, breaking the forth wall could be done and done well, but it would really change what makes Undertale enjoyable to many. You would also need to give Frisk a more distinct character if you were to make a movie out of it.

Yeah, Frisk's character would definitely have to be developed more. Everyone says Sans is the most mysterious character in the game, and while I agree with this, I do sometimes wonder about Frisk. What's his story??

Their lack of story is intentional as it leads you initially to assume that they are a blank slate to project yourself onto, else it would not be a surprise when it turns out that they are their own character and not the one which you named at the beginning.

I wonder how a theoretical Undertale 2 would look like.
If we consider the Deconstructing nature of Undertale it would probably Deconstruct the Idea of a Videogame Sequel which is mostly filled with more of the old but more refined. Or a Deconstruction about the absurd ways to meet popular characters from the last game or even have them as boss battles again.

I didn't get spoiled much for Undertale before I decided to actually go and see what its deal was. Before that, I'd seen fanart but I didn't really understand it, and then a ...friend (that's right, ellipsis-friend) decided to try and get me into it. Thing is she had this annoying habit of describing things to me in the least appealing way possible. So from her description, I got the impression that it was less an interesting game and more a bunch of random shit some dumbass thought was funny and decided to put together into something he could sell, and it probably got popular because of memes or something.
Then one of my favorite let's players did a one-off video of it and I decided to watch it because why the hell not, at least I'll get to hear some funny commentary, and it turned out to not be what I was expecting. I decided to go watch a few videos of gameplay and I only watched until they reached Napstablook's house, I think. That's about when I decided I wanted to play the game for myself.
There were some late-game things I got spoiled for, because when you live on the Internet it's inevitable. I knew Omega Flowey was a thing, for one. I hadn't been spoiled for the actual gameplay though, and I knew nothing of what the fights would entail. I think I died eight times trying to spare Asgore before I got frustrated and looked up how to beat him. And then I got to Omega Flowey and it felt like I went from bullet hell to actual hell. Even watching gameplay didn't help me a whole lot because I still had to be spared by Papyrus the first time I played (I reset once because I ran out of healing items and got stuck on Undyne).
So, ah, I'm a latecomer to the fandom, but I'm so glad I gave it a shot despite my ...friend's description of it.
